I think I messed up the flax egg because these didn’t hold together very well, even after leaving the dough in the fridge for a while. But that is not to say they weren’t delicious and filling! I look forward to trying again.

I won’t lie, the smell of the raw pumpkin puree in a coconut milk sauce had me questioning this recipe. But once it was cooked down I realized that Nisha has never led me astray before and I should know better. Easy 5 star recipe but I do not recommend taste-testing until it’s almost done lol.

I added a tsp or so of balsamic vinegar at the end which evened out the sweetness really nicely.

Holy (vegan) mackerel, this was delicious! I’ve never had the confidence to try east asian recipes until trying your other stir fry. I gave this ago and it really wasn’t too hard, especially because I already had the Shaoxing wine and rice vinegar. Definitely adding this to my rotation!
